Cardamom Fig Jam1lb fresh Figs¾ cup cane sugar OR brown sugar12 cardamons podsJuice of 1 lemon2 tablespoon pomegranate molasses .
Lightly crushed the cardamom pods and toast on medium heat until you can smell their Aromat (a South African Spice). Remove from heat. Chopped figs coarsely and put them to the pot. Add the lemon juice sugar and molasses stir and set aside for 30 minutes. Bring the mixture up to a simmer and cook stirring constantly. Cook until thicken and glossy. Jam can be chunky or use a blender to blend.Leave to cool. Ready
