Roll of Today Puff Pastry
Jam
Icing Sugar
Scone Cutter
Melted butter - used to brush the pastry
METHOD
Set the oven temperature to 160 degrees. Lightly butter the mini muffin tray and keep aside. Open the pastry as a flat sheet. Take the scone cutter and cut the pastry. Place into the mini muffin pan and lightly brush with butter . Put into oven until puffed up and light brown in colour. Remove and place on a cooling rack. Once cooled, open each pastry in half. Place a teaspoon of jam into each and close. Sprinkle with icing sugar and enjoy! Makes 24.
