INGREDIENTS
1kg chicken mince1 cup fresh breadcrumbs2 eggs (beaten)1 grated onion½ cup grated white cheddar cheese Or pecorino romano cheeseFist freshly chopped parsley2 tablespoon tomato paste1 tablespoon Worcestershire Sauce1 ½ teaspoon salt1 tablespoon ground garlic¼ teaspoon dried mixed herbs¼ teaspoon ground black pepper1 ½ teaspoon ground green chillies
Glaze-4 tablespoon tomato sauce1 tablespoon brown sugar1 tablespoon Worcestershire Sauce
METHOD
1. Preheat oven to 180degC.2. Wash and squeeze out the water from chicken mince.3. Place mince aside in a large bowl.4. In a separate dish, combine all dry ingredients and mix together.5. Sprinkle dry ingredients over the chicken mince. 6. Add remaining wet ingredients and mix thoroughly to combine. 7. In a separate dish, prepare the meatloaf glaze by mixing tomato sauce, brown sugar and Worcestershire sauce.8. Spoon a couple of tablespoons of glaze into the bottom of a greased loaf pan.9. Then place the chicken meatloaf mixture into the pan and form into a loaf.10. Paint the chicken meatloaf with the remaining glaze.11. Bake in the oven uncovered for 90 minutes.12. Remove from the oven, let rest for a few minutes, slice and serve.
