INGREDIENTS
6 kiwisRoses passion fruit cordialSoda water (chilled)Handful mint leaves4-6 tablespoon sugarCrushed iceSqueeze of lime juice (optional)
METHOD
1. Muddle the mint and the sugar together to help release the oils from the mint.2. Place ice in jug and fill ⅓ of jug with passion fruit cordial.3. Add the muddled mint in the jug, then mix. 4. Remove skin & slice 1 kiwi for garnish.5. Mash the remainder kiwi, if using lime, then add to mashed kiwi.6. Add to mixture and mix in.7. Top with soda water. 8. Mix in and serve garnished with mint.
INFO & TIPS
Note: Color sugar with green food coloring. Rub lime around the rims of glasses. Dip into colored sugar for frosted rims. Place kiwi slices on rim for garnish and fresh mint leaves.
