45 ml butter or margarine
125 g macon, chopped
2 cloves garlic, crushed
400 g (about 8) large brown mushrooms
45 ml Snowflake cake flour
250 ml milk
salt and freshly ground black pepper to taste
250 ml (100 g) grated Cheddar cheese
chopped fresh chives to garnish
1. Melt butter in a medium, heavy-based saucepan.
Add macon and garlic and fry for a few minutes.
Remove the stems from the mushrooms, chop stems
coarsely and add to pan.
2. Add flour and stir for a few minutes. Add milk
and seasoning, stir constantly and boil for a few
minutes until thickened. Remove from heat and add

minutes or until starting to turn golden brown.
