INGREDIENTS
3 tablespoons olive oil½ teaspoon ginger paste½ teaspoon garlic paste1 large onion finely slicedQuarter red,yellow,green capsicum (peppers) cubed1 large tomatoe blitz it with a hand blender1 teaspoon dry cumin powder (jeera)1 teaspoon dry coriander powder(dhana)1 teaspoon coarse red chillies1 teaspoon salt or to taste¼ teaspoon sugar1 teaspoon paprika4 eggsChopped fresh dhania (coriander)Optional:1 teaspoon tomatoe paste
METHOD
Heat olive oil add ginger,garlic paste and braise a little add finely sliced onions and braise untill soft and golden brown.Add tri colour peppers and cook a little.Add dry spices braise a little.Add tomatoes and cook untill water evaporates.Make a space for the eggs and place them carefully.Close the pan with a lid to cook the eggs.Cook untill your eggs are to your liking.I had to sprinkle a little water on the sides because my chutney was sticking a little,so l suggest cooking on a low heat.Sprinkle with freshly chopped dhania (coriander) (coriander)
