1 pineapple (peeled and diced)½ can litchis½ can litchi syrup¼ cup Roses lime cordialSoda water (chilled)Litchi and Pineapple (garnish)Ice (to serve on)
1. To make a pineapple jug, cut the top off a large pineapple. 2. Using a metal serving spoon, hollow out the pineapple reserving the flesh and juice. 3. Place pineapple flesh, litchies, litchi syrup, lime cordial in a blender and process until smooth. 4. This step is optional- strain the mixture into a jug.5. Add a little crushed ice to two hollowed out pineapples.6. Fill with mixture till ¾ full.7. Top the rest with the Soda water. 8. Garnish skewers with pineapple slices and litchis.
