INGREDIENTS
2 garlic cloves - grated
2inch pieces of ginger - grated
3tblsp olive oil
Pinch of red chilly flakes
Handful of mangetout
6 baby corns - cut into half
1 large carrot - julienne cut
½ green and ½ red pepper - cut into strips
½ red onion - cut into thin slices
1 teaspoon vinegar
Juice of a lemon
2 teaspoon brown sugar
1tblsp honey
1 teaspoon soy sauce
1tblsp sweet chilly sauce
Salt and pepper to taste
2 balls of egg noodles
METHOD
Heat the oil in a wok and fry the grated ginger and garlic with the chilly flakes until the garlic turns brown. Add in all the veggies and stirfry for a few minutes then add in the honey,soy sauce ,vinager , chilly sauce half the lemon juice and salt and pepper. Cook on high until veggies are crsip but tender. Add in the boiled noodles and remaining lemon juice. Mix well and serve.
