INGREDIENTS
1 box hake medallionsOil for fryingLemon/lime wedges½ cup self raising flour.
Cajun Spice-2 tablespoons garlic powder2 tablespoons Italian seasoning2 tablespoons paprika powder2 tablespoons salt1 tablespoon black pepper powder1 tablespoon cayenne pepper1 tablespoon dried thyme1 tablespoon onion powder
METHOD
Cajun spice-Mix all ingredients and store in airtight container.
Hake-1. Cut eat medallion in half lengthwise.2. Cut each strip into thirds.3. Add 2 tablespoon of cajun spice into flour.4. Roll fish cubes into spiced flour.5. Leave aside whilst heating oil in frying pan.6. When oil is ready, roll cubes in flour again.7. Shallow fry on med-high heat till crispy.8. Leave on kitchen paper to drain excess oil.9. Thread onto mini skewers. 10. Serve with tartar sauce & lime/lemon wedges
INFO & TIPS
If placing 3 cubes per skewer, you get 10 skewers. 2 skewers is equivalent of 1 hake medallion.
