INGREDIENTS
6 store bought tortillas (or more if you do not want it too full)1 ½ cups cheddar cheese
Filling-1 onion (chopped)2 tablespoon ground garlic500g lean beef mince2 small carrots (diced)½ tablespoon red ginger garlic masala1 ½ teaspoon chilli powder1 teaspoon dhana jeeroo powder½ teaspoon paprika1 teaspoon salt¼ teaspoon white pepper¼ teaspoon dried oregano1 can black beans¼ cup sour cream½ can chopped tomatoes½ cup water
METHOD
1. Add onions to a large skillet and saute till softened.2. Add red masala & garlic, braise for few seconds, add spices and braise till fragrant.3. Add mince and cook over medium heat until browned.4. Add in diced carrots with chopped tomatoes & water & cook until carrots have softened.5. Stir in beans until well incorporated, followed by sour cream. Heat through.6. Microwave tortillas for 30 seconds or until warmed through.7. Line the middle of each tortilla with desired amount of cheese. 8. Top with Beef and Bean filling. Fold in the edges of each tortilla and roll up “burrito style.” 9. Serve with additional sour cream, guacamole, etc. (optional).10. If you'd like to make burritos crispy, heat a large nonstick skillet on medium heat.11. Place on burritos, seam side down.12. Cook until golden.
