INGREDIENTS
250g butter
100ml oil
250ml castor sugar
1 egg
10ml vanilla essence
approx 6 cups flour
10ml baking powder
2 cups coconut
200g cherries - diced
METHOD
Mix butter, oil & sugar until light & fluffy. Add egg & vanilla & mix well. Add cherries and coconut & mix well again. Add baking powder & flour. Make sure that when you add the flour, the dough must be nice & soft to roll / cut shapes with biscuit cutter. NB: Dough should be about 3mm when rolling. Place on floured tray and bake at 160 degrees for approximately 10 to 15 minutes. Remove, cool & enjoy !!!
