1 kg chicken fillet or pieces 1TB turmeric powder ¼ cup olive oil 2 green chilies 1cm piece of ginger 2 cloves of garlic Salt and pepper to taste Green Olives, pitted 1 cup coriander, loosely packed 1 lemon, sliced 1 lemon, juiced
1. In a blender, blend together olive oil, turmeric, ginger, garlic, lemon juice, chilies, lemon juice, salt and pepper. 2. Pour over and massage into chicken. 3. Lay in pyrex and sprinkle coriander and sliced lemons. Add whole or sliced green olives. 4. Cover and bake in oven until chicken is cooked (approx 1 hour). Served here with a salad.
