2 large potatoes18 med cubes of cheddar cheese1-2 stalks chopped spring onionSalt and pepper (to taste)1 teaspoon ground garlic paste¼ cup cake flour2 beaten eggsCornflake crumbs/ breadcrumbs
1. Boil or bake potatoes. Remove peel.2. Mash into a dry mash and season with salt and pepper.3. Mix in garlic and spring onions.4. Place a spoon of dry mash in palm, flatten.5. Place cheese cube in the center and mould mash firmly around cheese in a ball.6. Place in fridge to firm.7. Roll in flour, then dip in egg and crumbs.8. Heat oil, and fry till golden.9. Drain excess oil on kitchen paper.10. Serve with favourite savoury dip.
