INGREDIENTS
¾ lb butter (¾ of a 500g brick of butter) 1 and ¾ cup sugar2 eggs½ cup of golden syrup4heaped teaspoon ginger powder2 heaped teaspoon cinnamon2 level teaspoon cloves2 level teaspoon baking powder2 level teaspoon bicarb (baking soda) Pinch of salt.
METHOD
¾ lb butter (¾ of a 500g brick of butter) 1 and ¾ cup sugarBeat together until creamy . Add 2 eggsBeat v well. . Add ½ cup of golden syrup4heaped teaspoon ginger powder2 heaped teaspoon cinnamon2 heaped teaspoon cloves2 level teaspoon baking powder2 level teaspoon bicarb (baking soda) Pinch of salt. . Fold until combined. Add flour (approx 5 and ½ cups flour) .Pinch of small pieces of dough. Manipulate into a ball shape. Roll in sugar..Place on a tray, Largely spaced between each other. (this dough spreads and flattens, that's why it's good to make the ball a bit smaller)
INFO & TIPS
If you add less flour you will yield a flat ginger snap.
If you add more and make a firmer dough you will yield a slight heaped shape.
The difference in texture between these two is crisp and crunch VS chewy and crunchy. (it's a preference ❤️💐)

You may add a little more spice if you prefer.
