INGREDIENTS
1 cup flour½ cup oil½ cup castor sugar 1 ½ teaspoon Baking powder 3 tablespoon cocoa powder 1 teaspoon vanilla essence ¾ cup milk125 g butter 3 egg yolks
METHOD
Beat butter and castor sugar till light and fluffy Add yolks ,Vanilla essence Fold in dry ingredients and then milk. Mix well.
Filling:
Beat egg whites till stiff Fold in ¼ cup icing sugar and ½ cup desiccated coconut
Pour 2/3 of the batter into greased cake tin
Layer coconut mixture
Pour over rest of the batter
Bake at 180° for 40 minutes.
Check with cake tester if done.
Garnish with chocolate Ganache:
1 slab top deck melted with small tin dessert cream. Add 1 tablespoon coco powder while melting(Save 2 blocks of choc)
Pour over cake and grate the chocolate over
