INGREDIENTS
BASE:½ packet Tennis Biscuit80g Butter, melted
FILLING:2 Tubs Cottage Cheese1 Tin Condensed Milk¼ Cup lemon juice1 Tin Pineapple pieces1 teaspoon Vanilla Essence or lemon essence¼ Mint White Bubble - Heavenly Chocolate,(grated)
METHOD
Mix the biscuit in a food processor, then add the melted butter to it.Pour the base in a Pyrex dish or bowl. Set aside in fridge for 10 minutes.
Mix all the ingredients in a bowl whisking on medium speed with & electric beater for about 6 minutes....Then add in the essence & ½ tin of pineapple pieces. Pour the filling in the base.Decorate with the rest of the pineapple pieces & grated minty white chocolate on top.
INFO & TIPS
Any flake chocolate, KitKat or lemon slices for color & texture.
