INGREDIENTS
2 cups butternut steamed and mashed 1 cup sifted flour3 tablespoon sugar 2 teaspoon baking powder Half cup milk 1 egg1 teaspoon cinnamon
Extra cinnamon and sugar for sprinkling
METHOD
Cube and steam your butternut. Drain completely and mash, adding 1 teaspoon cinnamon. When it's cool, add the egg and milk and beat this until combined.
Sift the dry ingredients into this mixture and mix well.
Cook on a medium to hot non stick pan until cooked on both sides.
Sprinkle with cinnamon sugar and serve warm
