INGREDIENTS
Butternut-500g butternut cubes1-2 teaspoon rough red chillies½ teaspoon salt (or more to taste)½ teaspoon cumin powder½ teaspoon coriander powderPinch white pepper2 tablespoon butter½ cup fresh cream
Spinach-1 small onion (sliced)Olive oil500g packet spinach (chopped)1 tablespoon ground garlic½ teaspoon white pepper½ teaspoon salt1 tablespoon butter1 tablespoon flour½ cup fresh cream(Optional- pinch ground green chilli,Feta cheese/ mozzarella cheese/ parmesan cheese)
METHOD
Butternut-1. Snip the corner of butternut packet. Place on a microwavable plate.2. Cook in micro till steamed and tender. Alternatively cook on stove till tender.3. Mash till smooth and cook out any excess water.4. Add butter, spices and cream. Mix in.5. Simmer till cream has reduced and the butternut is smooth and creamy.
Spinach-1. Saute onion in oil till softened and lightly golden.2. Braise garlic, then add spinach and wilt with a little water.3. Add salt and pepper. Mix in.4. Move spinach to the sides after it has wilted.5. Add butter and melt, then add in flour and whisk together to form roux.6. Cook for a minute then add in cream gradullay, whisking till smooth.7. Then mix the spinach into the cream and cook till thickened. 8. If using cheese, add in now, allow to melt in and remove from heat.
