INGREDIENTS
3 cups plain flour1 I/4 cup cooking oil1 1/2cups sugar½ teaspoon salt1 teaspoon baking powder 1 ½ teaspoon Elachi (cardomom) powderWhole Almonds
METHOD
1.) Mix the flour, oil, baking powder, sugar, salt and Elachi (cardomom) powder to form a soft but rollable dough.2.) Roll into balls.3.) Place on to a greased baking tray, place a whole Almond in the middle of each Khatai then bake in a pre-heated oven @180degrees for about 7-9mins.4.) Khatai’s will be really soft when removed from the oven, leave to cool in the baking tray before transferring to a cooling rack.

Maryam finds this recipe a little too oily so we adapted the recipe as below for a less oily and tastier version:
