Cut chicken into peices Marinate with:
Red chilli powder (according to level of heat)2 teaspoon dried parsley 3 teaspoon coriander powder 3 teaspoon cumin powder 1 tablespoon lemon juice 1 teaspoon turmeric 1 teaspoon lemon pepperCrushed black pepper 2 teaspoon Portuguese peri peri spice(optional)1 teaspoon Robertsons chicken spice 2 tablespoon mayonnaise 1 tablespoon tomato sauce1 tablespoon steers hot peri peri sauce Salt to taste (1 teaspoon)Cut onion chunks and add to marinated chicken
METHOD
Pre-heat oven.
In a tray, lay foil.Add the chickenCut tomato rings and place over the chicken Cover with foil
Place in oven on 190-200°c (depends on how your oven is)
Keep for 35 minutes Remove and toss chickenRemove foil
Place in oven again for about 15 minutes.
