Chicken Karai My Style
By Naseema Khan (zulfis) - MASTER CHEFRECIPE
1 kg cut up chicken
Wash and put in pot to steam without water till colour changes
Keep aside
Fry 1 large grated onion
In ¼ cup ghee (Clarified butter) or oil
Till golden in colour
With 3 cinnamon sticks
1 teaspoon whole jeera
3-4 whole black pepers
1 aniseed
2 Elachi (cardomom) pods
3-4 curry leaves
3 whole green chillie
Now add the chicken pieces
1 heaped teaspoon Ginger garlic
Braise for few minutes
Add
2 teaspoon dhana jeera
1 tablespoon orange spice (optional)
2 teaspoon kashmiri chilli
¼ teaspoon black peper pwdr
1 teaspoon salt
½ teaspoon tumeric ( tumeric)
½ teaspoon garam masala
Braise till well coated on chicken
Add 2 grated tomatoes
3 tablespoon tomato puree
Cook till well blended
And chicken cooked
Add more salt if necessary
OPTIONAL:
You may add 4 potatoes cut in halves fried or steamed
Add water if necessary
For little gravy
Cook all together
Garnish with dhania (coriander)
Serve with rice or roti or naan roti
Salads Achaar etc
