INGREDIENTS
2 carrots (peeled, thinly sliced in rounds)1 onion sliced2 tablespoon oil2 chicken fillets (cubed small)1 tablespoon Robertson's veggie seasoningSalt (to taste)Pinch ground green chillies1 large potato (baked)1 packet Knorr Curry Vegetable soup2 cups water2 cups milk1 tablespoon butter¼ cup fresh cream¼ teaspoon orange food colouringChopped dhania (coriander) (coriander)
Garnish-Red chilli flakesCreamCroutons to serve
METHOD
1. Braise onion and carrots in oil till just softening.2. Add chicken cubes and chillies and mix in.3. Add veggie seasoning mix in, cook till chicken is half done.4. Add water and milk. Heat through.5. Add in packet soup, mix in.6. Add in butter and diced potato.7. Cook till thickened, then add in chopped coriander and cream.8. Heat through. Serve with croutons.

Double recipe if making for more than 2-3 as a main meal.
