INGREDIENTS
60g Stork to bake margarine/ or butter1 cup castor sugar3 extra large eggs1 cup cake flour¼ teaspoon salt1 teaspoon baking powder½ cup milk1-2 tins Koo unsweetened pie apple slices
Sauce-1 tin Nestke Ideal milk½ cup ordinary sugar1 teaspoon caramel essence
Garnish-Cinnamon powder
METHOD
1. Beat margarine and sugar till pale, then add in eggs, beating one at a time.2. Mix in milk and salt.3. Now add in sifted flour and baking powder, mix in.4. Grease an oven proof baking dish/pyrex. 5. Pour in batter.6. Place apple slices on top.7. Cover with foil and place in a preheated oven at 160°C.8. Bake for +/-45min.9. Boil sauce ingredients till slightly thickened.10. As soon as pudding is done, pour sauce over whilst hot.11. Sprinkle cinnamon over. 12. Leave to soak in refrigerator.
INFO & TIPS
Note: If I have fresh crisp pink apples on hand, I use that in place of tinned pie apple slices. Just peel, slice medium thick slices and arrange over. If you'd like the pudding hot, then switch the oven off, pour the sauce over pudding, and leave the pudding in the oven to soak with the door slightly ajar, so it doesn't overbake and dry out. Or may just reheat in oven or microwave after it has soaked in refrigerator.
