1 cup sugar2 egg1 tablespoon Apricot Jam1 cup flour ¼ cup self raising flour1 teaspoon baking powder Pinch of salt1 teaspoon bicarbonate soda 1 teaspoon vinegar1 tablespoon melted butter1 cup milk
Whisk the sugar, egg and jam together. Add the sifted dry ingredients and mix well. Then add in melted butter, vinegar, milk and bicarbonate soda and whisk till well combined. Pour into a greased muffin pans or into one Pyrex dish (30 cm x 17 cm). Bake at 160 degrees till done and skewer comes out clean. Syrup:125 ml fresh cream½ cup sugar¼ cup hot water1 tablespoon butter 1 teaspoon vanilla essence Bring to a boil over medium heat and pour over hot pudding after poking a few holes with fork.
