INGREDIENTS
1 packet 250g dried apricots (Qubani)I used Seedless Turkish Apricots Soak the apricots in hot water overnight ,make sure the apricots are covered with water
The apricots will swell and become soft
1 ½ cup strained water from the soaked apricots1 cup sugar or more according to your taste1 Handful whole Almonds

METHOD
Remove the apricots with a slotted spoon and keep the water aside. In a pan, add the water that was we kept aside. The water will be a lovely golden color.Add the apricots to the water and allow to cook on a medium to low heatThe apricots will become soft.Stir and keep an eye on the apricots while its cooking.If the mixture looks dry, then you can add some more of the water which was kept aside.Add in the whole AlmondsYou can mash the apricots while stirring. l blitz it with a handblender that way the almonds will also get blitzed into smaller pieces.Add in the sugarStir and continue to cook till the mixture thickens a bit, approx 5-6 minutes on a low flame.Stir well. The Khubani ka Meetha is ready now. The consistency is neither too dry nor too liquid.Serve with fresh whipped cream or Vanilla
