RECIPE
Put ½ cup ghee (Clarified butter) and ½ cup oil in a potAdd sliced onion, 3 Elachi (cardomom), some taj, a little whole jeeru (cumin), few whole peppercorns, a few cloves and 3 whole green chillies. Braise it all till the onions are pink in colour.Add your meat Then add Salt1 ½ teaspoon arad (Turmeric)1 teaspoon fine dhana1 teaspoon fine jeeru (cumin)1-2 teaspoon fine red chillies depending how strong u want it2 teaspoon ginger garlic masalaBraise all this for 5 minutesThe add 1-2 grated tomatoes and 1 tablespoons tomato paste Braise till it's a little dryThen add water till the meat is cookedOnce the meat is cooked add your fried potatoes And 2 tablespoons lemon juice Let it simmer for 8 minutes The add about 2 cups water Then add salt. If you cooking 2 cups rice then add 2 teaspoon saltOnce the water is boiling add your rice.Let rice cook. If needed add more water so that the rice is nicely cooked.Lastly add 1 cup water and let it steam on a low heat.
