INGREDIENTS
1kg fresh fish of choice2 onions2 potatoes1 green pepper10ml oil30ml lemon juice30ml chilli powder10ml garlic,crushed50ml mayonnaise5ml tumericsalt and pepper to tastea few curry leavesfresh dhania (coriander) leaves1 green chilli(optional)
METHOD
Preheat oven to 180degrees.Grease a casserole dish.Liquidise 1 onion,1 tomato and ½ green pepper.Place oil,lemon juice,chilli powder,garlic,mayonnaise,tumeric powder,curry leaves and salt and pepper into the pot.Add liquidised mixture and cookover low heat until mixture thickens.Cool.Marinate fish in cooked mixture for 1 hour.Place fish in casserole dish,cover with foil, and bake for 10-15 minutes.
Meanwhile,slice remaining tomato,onion and green pepper.Remove fish from oven,uncover and top with sliced vegetables.Place casserole back in oven for a further 10-15 minutes, and cook until done.
Garnish with dhania (coriander) and green chilli.
Serves 6-8
