1. Mix maizena (corn flour) and dry spices in wide shallow bowl; set aside.2. Beat egg whites in a wide shallow bowl until frothy.3. Place coconut in a wide shallow bowl.4. Dredge chicken fillets in seasoned maizena (corn flour), shake off excess.5. Dip chicken in egg whites, then press chicken into coconut, coating all over.6. Heat oil in a frying pan.7. Add chicken to the pan, only when the oil is hot, in batches.8. Fry until cooked through on either side & golden.9. Drain excess oil on kitchen paper.10. Serve with a spicy sauce of choice with fries.
