1 Cup Oil1 & ½ Cups of SugarBeat wellAdd3 EggsVanilla essenceBeatAdd in 2 Grated Carrots(Optional is ½ cup Crushed Pineapple or Sultanas) Handfull Chopped Pecans Nuts1 cup Dessicated Cononut1 heaped teaspoon Cinnamon Powder¾ teaspoon Mixed Spice½ teaspoon saltBeat wellAdd¾ teaspoon Bicarb2 Heaped teaspoon Baking PowderBeatAdd +- 1 & ½ Cups of FlourBeat wellAdd ¼ Cup Hot waterBeat againPour into well greased Muffin Tray orTray(If Muffins either Square Or RoundsFill Half way with icecream scoop as it rises) At this stage you can either Sprinkle More Pecans and Or Almonds on top Smear with Icing (I love it with Butter icing and not Cream Cheese icing Cream cheese icingSprinkle again Pecans or Almonds over the IcingEnjoy😋
