INGREDIENTS
1½ cups sugar½ cup brown sugar1¼ cup vegetable oil4 eggs2¼ cups sifted flour1½ teaspoon baking soda1½ teaspoon baking powder2 teaspoon cinnamon½ teaspoon salt3 cups shredded/grated carrots1 cup chopped pecans
CREAM CHEESE FROSTING230g cream cheese 110g butter room temperature3 cups powdered sugar sifted2 teaspoons vanilla
METHOD
Carrot Cake:Whisk the sugar and oil.Add in the eggs and whisk again. Next add in the sifted flour and mix. Add in the baking soda, baking powder, cinnamon powder and salt and mix well.Then mix in the shredded carrots and lastly the chopped pecans
Divide into two round baking pans lined with baking paperBake at 175° in a preheated oven for 25 minutes or until toothpick comes out clean
Cream Cheese Topping:Whisk together the cream cheese and butter until creamy and fluffy, gradually add in the sifted powdered sugar and vanilla.
Frost and decorate the cake as you desire,I used pecans
