INGREDIENTS
2 cups dates chopped¼ cup butter½ cup boiled water½ cup hot decaf coffee1 egg1 teaspoon vanilla⅔ cup brown sugar1 ¾ cups flour1 teaspoon salt1 teaspoon baking powder½ teaspoon baking soda¾ cup chopped walnuts
METHOD
Place dates in medium sized bowl
Add butter Pour boiling water and coffee over butter and dates. Let dates sit for 15 minutes, to soften and cool.
Preheat oven to 190°C and grease a bread pan. Grease loaf pan.
In a small bowl, assemble flour, salt, baking powder and baking soda, set aside
In another small bowl crack open egg and add vanilla and brown sugar whisk until incorporated pour on date mixture.
Add dry ingredients and stir until just incorporated, do not over mix, add walnuts stir, pour into prepared loaf pan
Bake for 50 minutes or untill a skewer inserted comes out clean.
Let cool for 10 minutes before removing from pan. Place on rack to coolSlice slather cream cheese on it. Enjoy.
