INGREDIENTS
20ml cooking oil2 large onions finely chopped1kg lamb or mutton pieces1 green chilli,finely chopped15ml salt or to taste15ml ginger and garlic paste15ml jeera powder15ml dhania (coriander) powder5ml fennel (barishap) powder15ml tumeric15ml cayenne pepper1 whole clove3 cardamon seeds3 cinnamon sticks4 medium potatoespeeled and quartered100ml hot water4x250ml uncooked rice60ml dhania (coriander),chopped
METHOD
Heat oil in a large pot.Add onions and braise until golden and soft.Add meat,chilli,garlic and ginger paste and spices,and cook covered over medium heat until meat is tender.Add potatoes and hot water,and cook for another 10 minutes.
Pour rice over meat mixture.Add enough water to cook the rice.Fast-boil rice without stirring.When settled,stir well and steam,covered,for 20-30 minutes or until rice is done.
Garnish with dhania (coriander) and serve with atchar and dhai.
Serves 6-8
