A beautiful lady Louisa that taught me coconut can be used in everything
3 hake fish fillets cut into 42 cups Oriental stir fry (carrots,baby corn, tomato,peas)1 dry red chilli1 onion grated½ can coconut creamAdd Salt to your taste 1 teaspoon boori1 teaspoon cumin/coriander1 teaspoon cayenne pepper1 tablespoon lemon juice1 cup of water3 tablespoons coconut oil2 teaspoons of chopped garlic
▪Say BISMILLAH when beginning- Allah will fill the food with barkat & noor ▪Boil your stir fry until soft (not mushy) in the 1 cup of water 10 minutes high heat add salt.▪Add coconut oil to pot braise onions until translucent then add garlic and dry spices (except cayenne pepper) and add your dry chilli when your garlic begins to brown add vegetables with the water.▪Boil 5 minutes let the water reduce if you want less gravy boil for longer then add your fish.▪ Boil for 8 minutes (medium heat) then add half coconut cream & cayenne pepper mix it in gently so your fish doesn't break. Boil for 2 minutes.▪ remove from stove top add your lemon juice mixing in gently and garnish with dry parsley (optional) ▪Say Alhamdulillah upon completing as Allah made you the reason of satiating hunger and your ability to do so was from Allah SWT…. ☆Served with Basmati rice flavoured with bayleafs.
INFO & TIPS
Prep ingredients before hand once you add your fish watch your pot like a hawk as fish cooks super fast and overcooked fish is a disaster.
If you want a richer gravy with a super empowering taste of coconut add 1/2 cup of water & 1 full can of coconut cream. Super fast and healthy meal.
