INGREDIENTS
Butter beans:1 tin of butter beans in salted water1 medium onion3 small tomatoes (liquidized)1 cup of baby spinach leaves (Optional)1 teaspoon Salt½ teaspoon sugar ½ teaspoon chilli powder¼ teaspoon arad (Turmeric) ½ teaspoon dhana Jeeru (Cumin) powder1 teaspoon Fresh green garlic (looks like springonions)Oil
Dumplings:1 cup plain flour1 teaspoon baking powderSaltChilli powderBit of oilEqual amnts of warm water and milk(mixed) +-¼ cup
METHOD
Butter beans:1.) Cook onions in oil in a non stick pot with until golden brown in colour.2.) Add tomatoes,green garlic and all the spices and cook on medium heat for +-15mins.3.) Drain the butter beans and add to the above,add the baby spinach leaves and leave to simmer on low for approx 10mins.4.) Add approx 1/2cup boiling water and boil on high (add dumplings to this,cover with lid and cook till dumplings have doubled in size and cooked through (approx 10mins) - do not remove lid while dumplings are cooking as they will shrink!).
-serve immediately :)
Dumplings:1.)Mix all dry ingredients together, add the warm milk/water and mix to form a stickyish dough 2.) Roll into balls with a bit of flour and drop into boiling butter beans.
INFO & TIPS
1.)This could be served as butter beans bunny if you don't want to make dumplings :)
2.)Serve with masala steak if the men in your house need something meaty on the side :)
3) Butter beans can be substituted with sugar beans or mixed beans :)
