INGREDIENTS
¼ cup olive oil1 chicken cut into pieces2 tablespoons crushed garlic2 large carrots sliced into circles2 large potatoes cut into pieces or baby potatoes4 baby onionsSalt to taste2 tablespoon Harissa spice blend2 teaspoon ground coriander2 teaspoon ground cumin½ teaspoon turmeric1 can plum tomatoes1 can chick peas drainedFresh parsley
METHOD
Heat the olive oil braise the garlic and the harissa paste add in the dry spices Add a little water so the spices doesn’t burn.turn down the heat to low.Add in the chicken,carrots,potatoes,baby onions,canned tomatoes and chick peas.Add a little more water to allow the food to cookCover and leave to cook for 20/25 minutes stirring regularly.This dish can be prepared in a clay pot or a normal pot if you don’t have a Tagine or clay pot.The Tagine or clay pot keeps the moisture inside so the food cooks in its own juices and makes the dish more flavourful❤️
