this is my sister's recipe Fatima Jada
I can't master it as she does but mine did come out yummy.
250ml water115g butterpinch of salt150g cake flour4 large eggs
Heat water butter salt together until water boils and butter melts add flour all at once stir quickly with wooden spoon until mixture forms into a ball. Stir further over low heat few minutes to dry paste out.. chill in fridge for about 10mins. add egg one at a time beating well after each addition till texture is nice and smooth.Preheat oven 200 degrees.Place at the bottom tray a small stainless steel bowl with water as u preheat oven. Pipe the dough in circle or long form. Bake for 10mins at 200degrees. than lower the heat to 180 degrees for about 25 to 30 minutes. Remove from oven prick with a toothpick a few in each eclairs. Allow to cool completly. Using a sharp knives cut of the centre on top. pipe whipped cream place lid than drizzle melted chocolate and enjoy your bite.......
