🇵🇹 family recipe
Crust1 1⁄2 cups flour1 1⁄2 teaspoons baking powder1 pinch of fine salt1⁄3 cup castor sugar or ⅓ cup superfine sugar80g/ 2 . 82ozs . butter, softened1 small egg Filling2 sweet potatoes 60g butter 1 cup of brown sugar ½ cup milk 2 large eggs ½ teaspoon ground nutmeg ½ teaspoon ground cinnamon ½ teaspoon of ginger (optional) 2 cups of flour
Heat oven to 180°Cup Begin with Bismillah Ar Rahman Ar Rahim Crust - Step 1 - Measure the flour, baking powder and salt in a jug and whisk until combined. Cream butter and sugar together with a beater attachment until pale and fluffy (about 3 minutes). Add the egg and beat until thoroughly incorporated. By hand add in the flour mixture and mix until just combined.Crust - Step 2 - Press the dough into a 25cm/10inch tart plate with a removable base or a glass pie dish. Make sure that it isn't too thick and poke with a fork. Boil sweet potato until soft. Mash it up with butter and let it cool. Once cool add the rest of the ingredients for the filling mix well pour into unbaked crust. Bake for 45min or until top is golden and appears dry. Let it rest and cool completely before cutting. Sprinkle extra cinnamon over or powdered sugar for decoration. Alhamdulillah all done
INFO & TIPS
Don't bother doing a toothpick test as it will always come out with filling attached to it. Once the center on top appears dry and the crust is golden/browned then its done. Will rise up like a souffle when cooking but won't overflow.
Crust will be almost like a biscuit texture.
Can be served with whipped cream.
