2 medium poached eggsFew mushrooms grilled or sizzled in panA few cherry tomatoesHandful spinachTomotoes sautéed optional for a saucy dish 2 slice toast Rye (black seed) breadButterSeasoningCheese optional Fete cheeseSauce of choice
METHOD
Prepare by washing mushroom remove any debris and run in clear water. Drain and set aside. Sprinkle season salt and pepper
In a frying pan, add 1 tablespoon butter, add baby spinach, drizzle pinch salt, spinach should be under cooked. Set aside Next add the ripe cherry tomotoes,sprinkle sugar and salt, slightly allow to bruise but not burst open, remove set aside. In the same pan sizzle the mushroom for a few minutes remove set aside. In the meantime, use a glass plate and start plating the baby spinache, mushrooms, slightly bruised cherry tomotoes.
Pop the two slices of bread to toast.
In a small sauce pan bring water to boil. Crack the fresh eggs, check boiling temp add to the pot to get eggs poached for a few minutes using a slotted spoon remove the poached eggs and nestle between the prepared goodies directly onto the plate Sprinkle salt and black pepper in the oozing runny poached eggs...mozzarella grated and topped is optional. Confetti with fete cheese.... Avos are healthy choice... Enjoy this with your coffee or a glass of freshly made fruit juice.
