RECIPE
800g Hake cut and cleaned into nice size piecesAdd 1 tablespoon lemon juice 1 teaspoon Aromat (a South African Spice) 1 teaspoon Salt 2 tablespoon Robertsons Fish spice 1 teaspoon Green Garlic Paste. 1 teaspoon Ginger Garlic PasteKeep aside
Make Marinade ½ cup Maas ¼ cup nestle dessert cream⅓ cup oil (use oil u used to fry Potatoes) 2 tablespoon ghee (Clarified butter)½ cup Tomato puree3 Tomatoes liquidised2 tablespoon Lemon juice2 tablespoon Magic masala Or any Red Masala 1 tablespoon Ginger garlic paste 3 teaspoon Kashmiri chilli powder1 teaspoon Crushed red chilli3 Slit Green or Red chilli2 tablespoon Dhana jeera mix 1 teaspoon Chops and steak spice(Optional) 1 teaspoon Bbq Spice (optional) 1 teaspoon sugar (optional) 1 teaspoon full tumeric¼ lid Robertsons egg yellow food colouring 1 teaspoon crushed whole Jeeru (Cumin)tuj (cinnamon stick) Saffron / or Zafean EssenceAdd 2 grated onions (Fried) ½ cup Peas (may use mixed veg) 2 or 3 Curry leaves or bay leaves Mix all of the above togetherKeep marinade overnight
Boil 2 cups Rice with 1 tablespoon saltTill nice and FluffyDrainMake wagaar with ghee (Clarified butter) and Little onionTake 3 tablespoon of the boiled rice add a small drop of egg yellow food colouring mix well and add to the other rice sprinkle Saffron water and Biryani essence on the rice Take 5 potatoes cut in halves add salt and fry till gold in colourIN A FLAT POTAll the marinadeTake the Fish pieces place on top of the marinade together with what ever juices it hasPlace the Fried potatoes Sprinkle Green chopped dhania (coriander) overNow sprinkle Biryani /Saffron essence Take a foil make few slits or holes on itPlace it over the marinade Take the wagaar rice placebo top of this foil Sprinkle saffron water and or biryani essence overCover thd whole top of pot with foil Bake at 180 *in oven for 1& ¾ Hours Make sure the masala is wet not too dry
