INGREDIENTS
250g chicken fillet ½ packet cream of mushroom soup1 ½ cups milk½ cream ¼ onion finely chopped 1 cup mixed veg 1 cup mushrooms ¼ cup peppers 3 tablespoon ghee (Clarified butter) or butter ½ teaspoon garlic1 teaspoon origano 1 teaspoon parsley Puff pastryEgg for egg wash 1 ½ cup cheddar cheese
METHOD
In a pot braise onions, peppers, garlic,parsley and origano on low heat. Separately, mix the soup powder and milk together. Add chicken to the pot and mix well. Cook for 3-4 minutes then add in the sliced mushrooms and veggies. Mix well and cook for a further 6 minutes. Add in milk mixture and cream. Mix well and allow to cook till the consistency of the sauce becomes thick. Lastly add salt and pepper. To assemble the pie, line your casserole with a thin layer of pastry. Throw your filling on top and sprinkle cheddar cheese. Cover with another layer of pastry. Make sure your corners are sealed. I’ve used to a fork for this.
Garnish with parsley before baking in the oven at 180 degrees for 30mins
