INGREDIENTS
1 ½ lb chicken fillet - approx 3 full cups (cubed)2 medium potatoes (cut into cubes, boiled and kept aside)Salt to tastePepper & red chilli flakes according to how spicy you want it1 teaspoon ginger7 cloves of garlic1 ½ Fresh green chillies (crushed)1 tablespoon jeeru (cumin) powder 1 cup petit pois peas1 cup sweetcorn1 small jar piccalilli sauce1 small jar Tesco finest apricot & mango chutney or any other brand with similar flavours2 tablespoons tomato sauce1 1 /2 teaspoon brown sugarChopped coriander
METHOD
1.) Heat oil in a non-stick pan, add the chicken pieces, salt, pepper, chilli flakes. cook for about 5 minutes then add the ginger, garlic, green chilli and jeeru (cumin) powder.Continue to cook on medium heat.2.) When the water has almost evaporated from the chicken, add the peas, sweetcorn and boiled potatoes, continue to cook on medium heat until dry.3.) Blend the piccalilli sauce, mango & apricot chutney, sugar, tomato sauce together, mix well and add it to the cooked chicken - mix well again then turn the heat off. Remove from the stove add add the chopped coriander.4.) Leave to cool then fill in pur as pillows. This recipe makes approx. 75 pillows.5.) Freeze.6.) Fry in medium hot oil.7.) Enjoy!
