Chicken Drumsticks: (1)6 x Chicken Drumsticks 1 tablespoon minced ginger and garlicBlack pepper1 tablespoon kashmiri masala Fine salt to taste Teriyaki Sauce: (2)½ cup soy sauce¼ cup brown sugar1 ½ tspns fresh ginger and garlic, minced1 tablespoon honey1 teaspoon olive oil¼ cup water mixed with 3 tspns maizena (corn flour) Soy Fried Rice with Vegetables: (3)3 tblspns butter¼ cup soy sauce1 large carrot, peeled and cubedsweetcorn½ red and green pepper, cleaned, sliced and cubed1 small purple onion, chopped1 green chilli, sliced3 cloves garlic, minced1 cup cooked rice½ cup frozen peassalt and black pepper to taste
Method: (1) Marinate the drumsticks with the above ingredients for about an hour. Fry the drumsticks until well done and keep aside. Method: (2) Combine all ingredients in a small saucepan, bring to a boil, reduce heat and simmer for about 3 minutes. Remove from the heat, add the fried chicken drumsticks into the sauce and mix lightly. Garnish with sesame seeds and shallot. Method: (3) Preheat a large skillet or wok to medium heat. Add the butter to the pan when it's hot. Add the carrot, onion, peppers, peas, chilli and minced garlic. Add the salt and black pepper to taste. Allow to cook until tender, then add the soy sauce and mix well. Slowly add the cooked rice into the pan and mix until well combined. Remove and it's ready to eat.
