INGREDIENTS
1 ¾ cup cake flour 1 ¼ teaspoon baking powder 45g butter ghee (Clarified butter) Pinch salt Lemon juice few drops Plus minus ½ cup ice water to make dough¼ cup maizena (corn flour) sprinkling 2 Tablespoon butter ghee (Clarified butter) brushing Rose pink gel colour
METHOD
In a mixing bowl, add the flour baking powder, butter ghee (Clarified butter), salt, lemon juice and make a dough with ice water. If choosing two tone colours, make ball and colour accordingly. Eg. 3 of each or just make one colour. In this case, I made red for the rose petals. Now roll into roti size, brush with butter ghee (Clarified butter), sprinkle mazeina add another repeat till you completed all. Roll like swiss roll, closely, tuck in the side as you roll, seal the edges with water. Cover with a kitchen tea cloth and let the dough to rest. After 20 minutes, cut out about 2 cm piece from the log. Roll, slightly the size of a forefinger, slowly tilting it more towards the right, the centre layers will starts to show, in the shape of a opened up rose, carefully handle the piece, fry this in preheated oil, using a slotted spoon and fork, the pastry dough will start to open up in the oil, showing the layers, turn and do the other side, do not burn. Using the slotted spoon drain the excess oil remove and place in a flat tray or wire rack.
Syrup ½ cup sugar ¾ cup waterAdd few drops rose waterPlace in a deep saucepan and let it boil in a thickish syrup. Once cool drizzle syrup and serve these rose puris.

Different, eye catching, the beauty was when I immserse these in preheated oil, the wafer thin layers opened up into the most gorgeous roses.... ❤️🌹
I decided to go all red, fragile, shaped into large roses, the layers... Opened up as I immersed them in preheated oil.
An inspiration drawn from the normal puri, eye catching colours of red to colour the dough, the rest to follow in the method, patience is key......
