Soak in water, for few hours or overnight,add 1 teaspoon salt and 1 teaspoon sugar. Cut in halves. Remove seeds if there are any. Rinse nicely. Then add 1 teaspoon haldi 2 teaspoon red chillies 2-3 tablespoon Methi (Fenugreek) masala,sprinkling of salt. Mix well. And set aside. Half cup vinegar and quater cup sugar boil to form syrup. Mix 2 tablespoon maizena (corn flour) in a little water to form smooth paste add to syrup and whisk until completely smooth.Pour over the Kumquats. Make a vagaar, with oil, tir or mustard seeds, slit green chillies and curry leaves. Pour over and bottle. Store in fridge. Best eaten fresh.🍊🍊🍊🍊🍊🍊🍊🍊
