INGREDIENTS
500g flour
10ml cinnamon
10ml mixed spice
5ml nutmeg
3ml salt
30ml sugar
15g dry yeast
125ml low-fat or fat-free warm milk
1 egg, beaten
125ml dried-fruit cake mix such as Safari
golden syrup for glazing
METHOD
Dissolve 5ml of the sugar in 125ml warm water.
Add the yeast and leave to activate.
Sift the flour, spices, salt and 25ml sugar into
a large bowl.
Make a well in the center and add the warm milk,
yeast and egg. Knead until you have a soft and
pliable dough.
Place a clean bowl and leave to double in size.
Once doubled, add the cake mix and knead again
until all the fruit is evenly distributed.
Divide into 12 buns. Place on greased baking tray
and allow to rise once again.
Pipe a cross on the top and bake at 220°C until
well browned and risen.
Brush with golden syrup as soon as they come out
of the oven.
To make crosses:
Mix 100g flour with 15ml milk to form a piping
consistency.

Serve piping hot, either straight from the oven
or deliciously toasted the following day.
