INGREDIENTS
1 cup chopped dates 1 cup boiling water - 250ml 1 teaspoon bicarbonate soda
1 ½ cups self raising flour 100g butter - softened 150ml brown sugar 1 teaspoon vanilla essence 2 extra large eggs
Toffee sauce : 1 cup brown sugar 120g butter 250ml fresh cream ¼ cup milk .
METHOD
Preheat oven to 180 degrees
Combine the dates and bicarbonate soda pour the boiling water over and set aside for 15 minutes or until dates are softened .
Cream together butter and sugar until light and creamy gradually add the eggs and vanilla essence . Add the flour gradually as well . Fold in the date water mixture and mix until combined .
Bake for 20 to 30 minutes or until done .
Sauce : in a pan add all the ingredients and bring to boil keep stirring until sugar has completely dissolved .
As soon as the pudding is out of the oven poke holes everywhere this allowing the sauce to sink in . Immediately pour sauce our evenly whiles very hot .
Serve with nestle cream , fresh cream , ice cream.
