INGREDIENTS
3 big pieces of fillet , flatten and slit into 2 to 3 thin layers .
1 teaspoon garlic paste
½ teaspoon green chilli
1 teaspoon Ina parmans chilli garlic spice ( you can add whatever spice you like )
½ teaspoon black pepper
Sat to taste
2 tablespoon lemon juice
Olive oil
Basil pesto
You can purchase at a checkers , woollies or pick and pay
I made mine at home :
1 bunch fresh basil
¼ cup olive oil
Handful walnuts ( pine nuts / cashews )
7 garlic cloves chopped
Squeeze of lemon
Salt and dash of water
Rye (black seed) bread / olive bread / fuchsia bread / anything you prefer .
Sundried tomatoes
Grated mozzarella
Lettuce
A panini grill , griddle or George Forman
METHOD
in a pan add all the ingredients for chicken fillet and cook the chicken until completely done .
For basil pesto :
In a machine blend together the walnuts / pine nuts with garlic cloves . Now add the basil leaves with a dash of water , blend until crushed squeeze the lemon juice ( just a little ) add the olive oil and salt , blend and mix . Make sure the pesto is smooth .
Assemble :
On the slices of Rye (black seed) bread spread a thick layer of basil pesto , top with sundried tomatoes . Add prepared thin chicken slices ontop , sprinkle a good amount of cheese and cover with lettuce . Close using another slice .
Place on a heated griller( I used a George Forman) or pan and flatten to how you want , let it heat the panini forming the lines .
