INGREDIENTS
Β½ cup semolina 3 cups full cream milk1 egg1 teaspoon vanillaΒΌ teaspoon cinnamon powder2 tablespoon butterΒ½ cup sugar
METHOD
Add the butter to a pan, then the semolina, mix till melted and lightly toasted/golden. Add the milk and mix. Continue stirring for about 5 minutes till thickened. Remove from the heat. Add the vanilla, cinnamon and sugar. Mix well and leave to cool. In the meantime, separate the egg and beat the egg white till stiff. Add the yolk into the cooled semolina mixture and then fold in the beaten egg white. (You can add blobs of butter on the top now or leave it out) Sprinkle some cinnamon on top, and bake in 180c until set and golden approximately 25-30 minutes on fan. Serve immediately or refrigerate to slice.

INFO & TIPS
Tip: if you prefer it softer, cook less or add more milk.
*You can also leave out the cinnamon and vanilla and use rose water or syrup and cardamom powder instead.
