1kg hake,calamari or any other fishOil for frying Batter:250ml Snowflake cake flour60ml cornflour2ml mustard powder(optional)5ml salt1 extra large egg160ml iced water30ml fresh lemon juice
1. Sift all dry ingredients together2. Beat egg,water and lemon juice and add to dry ingredients. Beat until smooth. Leave batter to stand for about 30mins.3. Dip fish in batter and deep fry until golden brown.4. Drain on paper towel and serve hot. Serves 4-6
