INGREDIENTS
For the Lamb pieces skewer:Soft bits of meat with the fat on (cut into cubes, wash, drain and marinate with a bit of vinegar, salt, arad (Turmeric), ginger, garlic & a vegetable oxo cube - all to taste, no measurements for this part of the dish - sorry 🙈)
Sauce:Hot pepper sauce Lemon juiceRed pesto(Mix all 3 together to form a runny-ish paste)
For the Kebab skewer:1 kg mince meat can be 50/50 lamb(Qurbani with fat)/chicken or only chicken 1 big onionOne whole bulb of garlic(Finely chop the garlic & onion in a blender/chopper)1 tablespoon coriander powder1 tablespoon jeeru (cumin) powder1 tablespoon chili powder 1 tablespoon paprika powder 1.5 tablespoon salt
For the stuffed peppers:5 whole red peppers (cut the top off and clean the inside)4 big carrots (peeled & grated) 1 onion (sliced)Tomato sauce as neededOlive oil1 cup rice (boiled with salt and kept aside, sushi rice was used here but you can use any)
For the Morkovcha (also known as Korean-style carrots):4 medium carrots (finely julienned with a carrot shredder or julienne cutter)6 gloves of garlic (crushed)1 tablespoon olive oilSalt to taste½ teaspoon black pepper 1 tablespoon vinegar Sesame seeds (optional) Chilli powder of ground red pepper to taste
For the Aubergine roll ups:Aubergine (cut lengthways and fried)Soft Cream cheese (add crushed garlic to taste)
Flavoured garlic & chives soft cheese can be used
METHOD
For the Lamb pieces skewer:1.) Cook the marinated meat with a bit of water or in a pressure cooker until tender.2.) Thread cooked pieces on a skewer, brush with the sauce and grill for a few minutes. Remove from the grill and brush with a bit more sauce before serving.
For the Kebab skewer:1.) Mix all of the ingredients together and leave in the fridge for 3-4 hours.2.) Place the mixture on skewers to form kebabs and place in a grill to cook until tender.
For the stuffed peppers:1.) Braise the grated carrots and onions in olive oil until soft then add tomato sauce & mix.2.) Mix half of the sauce with the boiled riceand stuff this into the peppers.3.) Place the peppers in a deep baking tray & cover them with the tops that were removed, pour the rest of the sauce over this. Cover with foil and bake for approx 45mins. 2.) Remove foil, check with a fork if the peppers are cooked and soft then grill for a few minutes before serving.
For the Morkovcha (also known as Korean-style carrots):1.) Add all of the ingredients to the julienned carrots and mix well.
For the Aubergine roll ups:1.) Place blobs of the cheese mixture on each aubergine strip and roll up.
